Mushroom & Herb Frittata

In my house, we often clear the fridge on weekend mornings by using veggies and herbs that haven’t been eaten that week. You can sneak in as many veggies, herbs or spices as you like. Frittatas are a chance to be playful and adventurous with different combinations of things once you get the basic concept down. My kids will happily eat veggies, spices, and herbs in frittatas that they wouldn’t dare to eat if served on their own. This combination works just great together.

Eggs are loaded with protein, iron, vitamins, and minerals, and choline (an essential nutrient), which can enhance brain development and memory and helps to prevent fatigue and insomnia. Eggs from hens raised outside and/or fed Vitamin D enriched feed are a great source of Vitamin D, which can help prevent and manage depression.

Mushrooms are a great source of selenium, copper, thiamin, magnesium, and phosphorus as well as fiber, protein, and antioxidants. A 2019 study showed that seniors who ate two servings of mushrooms per day were found to have 50% less cases of mild cognitive impairment than those who ate less.

And cilantro is a great source of iron and vitamins and adds a really nice lightness and fragrance when baked in a variety of dishes and sprinkled on top as garnish. Its antioxidants may reduce brain inflammation, improve memory, and reduce anxiety symptoms.
